凉皮又称陕西凉皮,是陕西省汉族特色小吃之一。凉皮分为米皮和面皮两类。现有西府宝鸡擀面皮(发源于岐山县)、汉中米皮、秦镇米皮等流派。 凉皮历史远,凉皮传说源于秦始皇时期,距今已有两千多年历史,相传有一年陕西户县秦镇一带大旱,稻谷枯萎,百姓无法向朝廷纳供大米,有个叫李十二的用大米碾成面粉,蒸出面皮,献给秦始皇,秦始皇吃后大喜,命每天制作食用,形成了久负盛名的汉族传统小吃——秦镇大米面皮子。后因战乱失传。

面(mian)皮(pi)源于秦汉时期。相传刘邦(bang)(bang)在汉中称(cheng)王,命萧何修(xiu)筑山河堰,粮(liang)食连(lian)年丰(feng)收。农(nong)(nong)民为改善(shan)生活,把面(mian)粉加水稀释,蒸(zheng)(zheng)成薄饼,切(qie)条(tiao)凉拌(ban)而食,味道很美(mei)。一日,刘邦(bang)(bang)微服(fu)出(chu)访,进(jin)入百(bai)姓(xing)之家,好客的农(nong)(nong)民便以凉拌(ban)蒸(zheng)(zheng)饼丝(si)条(tiao)招待。刘邦(bang)(bang)边吃边称(cheng)赞(zan),问(wen)及名称(cheng),农(nong)(nong)民说(shuo)(shuo)不出(chu)来(lai),刘邦(bang)(bang)听了制作方法哈哈一笑,信口说(shuo)(shuo)道:“此乃蒸(zheng)(zheng)饼也。”后来(lai),人们改用(yong)重(zhong)叠式竹笼,一次可蒸(zheng)(zheng)数张,而且又(you)大又(you)簿。切(qie)成细(xi)条(tiao),筋丝(si)柔(rou)韧,软而不断,恰(qia)像皮(pi)条(tiao),改名“面(mian)皮(pi)”。

  说起面(mian)(mian)皮(pi)(pi)(pi),汉(han)中还流传着(zhe)一个(ge)“面(mian)(mian)皮(pi)(pi)(pi)知(zhi)府(fu)”的(de)故事。清代康熙(xi)年(nian)间,汉(han)中人(ren)(ren)张某在河南(nan)汝阳(yang)当县(xian)(xian)官。有(you)一年(nian)朝廷派钦差(cha)(cha)大臣到汝阳(yang)视察,张知(zhi)县(xian)(xian)未备酒宴,只(zhi)有(you)家乡的(de)面(mian)(mian)皮(pi)(pi)(pi)简(jian)单招待(dai)。钦差(cha)(cha)大人(ren)(ren)沿途吃喝,早觉胃(wei)口油腻(ni),一尝(chang)面(mian)(mian)皮(pi)(pi)(pi),喜之不尽。问起制作(zuo)方法,张知(zhi)县(xian)(xian)一一奉告。钦差(cha)(cha)回朝不久,张知(zhi)县(xian)(xian)就(jiu)提(ti)升为洛阳(yang)知(zhi)府(fu)。人(ren)(ren)们一致猜定,很可能(neng)是(shi)(shi)一餐面(mian)(mian)皮(pi)(pi)(pi)讨(tao)得钦差(cha)(cha)心欢(huan),美言上奏(zou)天子而(er)升官爵(jue)。此(ci)事传回汉(han)中,被老百姓戏(xi)称(cheng)为“面(mian)(mian)皮(pi)(pi)(pi)知(zhi)府(fu)”。但令人(ren)(ren)遗(yi)憾的(de)是(shi)(shi),北京人(ren)(ren)至今不会(hui)蒸(zheng)面(mian)(mian)皮(pi)(pi)(pi)。可能(neng)是(shi)(shi)钦差(cha)(cha)大人(ren)(ren)把(ba)制作(zuo)方法全忘(wang)了,即使想吃也(ye)做不出来。

  然而,汉中人制作面(mian)(mian)皮(pi)的工艺越(yue)来(lai)越(yue)精。如今(jin)早由原(yuan)来(lai)的面(mian)(mian)粉稀释改为大米磨浆。配(pei)料、调(diao)味更为讲究(jiu)。因而,不(bu)仅居(ju)民(min)农户(hu)、大小(xiao)集镇,处处面(mian)(mian)皮(pi)飘香,近几年(nian)一(yi)些(xie)人还去西(xi)安、西(xi)宁、洛阳、北京等(deng)城市去开小(xiao)吃店,专(zhuan)门经(jing)营“汉中面(mian)(mian)皮(pi)”。

  汉(han)(han)中的(de)面皮有悠(you)久的(de)历史。汉(han)(han)中凉(liang)皮主要是(shi)香在(zai)辣(la)椒中的(de)调料上(shang)(shang),尤其是(shi)在(zai)辣(la)椒油的(de)制(zhi)作(zuo)上(shang)(shang)下功夫。辣(la)椒油是(shi)凉(liang)皮(粉皮)调料中最(zui)关(guan)键的(de),好吃不好吃最(zui)主要取决于辣(la)椒中的(de)调料。
